
There seem to be so many different foods that are all called pancake. This is the variant that I like – the scotch pancake. Slightly toasted, with some butter over the top – ah heaven.
225g self-raising flour
25g caster sugar
40g butter
1 egg
250ml milk
Sieve the dry ingredients to avoid lumps, then mix everything to a batter. Drop from a spoon onto a hot tray, and wait for bubbles to stat coming through. Flip ‘em over to do the other side. And really, keep experimenting until it’s right!
